2008-07-16 13:27Snacking tempts many of us to fall shy of our healthy eating goals. Fortunately, summer offers an abundance of fresh fruits and vegetables that can make snacking both tasty and healthful. A key to healthy snacking is to eat foods rich in soluble fiber. Soluble fiber exits the stomach slowly and leaves you feeling satisfied longer. Some fiber-rich examples include: Peas and beans Oats and oat bran Barley Some fruits like apples, peaches, citrus, mango, plums, kiwi, pears, and berries Vegetables like artichokes, celery root, sweet potatoes, parsnips, turnips, acorn squash, brussel sprouts, cabbage, green peas, broccoli, carrots, cauliflower
